This thread is a few weeks old so I will post this for others that may stumble across it in order to help them (I hope).
It is easier to start small and build up, especially in T&T. A simple mine or abandoned building of some sort is infested with the monster du jour. The first one encountered is MR 10 or 15, as the party goes deeper more are encountered until you reach the survivability thresh hold. At that point back off.
Remember that not every monster needs a new set of stats. Just add in a special ability so the PCs need to make SR using various stats and you will have plenty of variety. Some are armored, some have sticky webs and others are poisonus...most are just teeth and hunger.
If the fledgling adventures come out mostly intact with enough coin to upgrade equipment they will be ready for more soon. Sometimes it is fun to not make every trip part of a storyline, let the adventure roll and the story tells it self.
Dungeon of the Rat does look excellent however and I may use it for my new players!
