What rules do people use for environmental damage? (Falling, Poison Gas, Fire....) I assume T&T has some standard rules for such things. I'm hoping it's not "Make your save or die," though.... I hate sudden death based on one bad roll.

There is no standard rule. It depends on the situation, and the GM is the judge of how bad the situation is. So it's up to the GM to determine how many dice to roll for such damage.
Some GMs might create rules they use to standardize damage for various environmental hazards, and if so, perhaps they will share some of them here. But I like to change things up, so that players aren't sitting there trying to calculate their odds based on some "standard" for damage.

Of course, there's always the other sort of environmental damage. A 'Smog' spell wouldn't do the local plant life much good, and could result in the characters being chased by irate farmers. Shattered potion bottles will not only leave broken glass / pottery everywhere, but the contents of the bottle will probably have some strange effects. Walls of Fire could turn into forest fires. Sorry for the thread hijack, but these were my first thoughts when I saw the title...
